Index card 6

This linguini recipe is one of my favourites. It’s my version of a dish that I fell in love with while camping near the beach in Arbruzzo, Italy. Truly a taste of the good life.

I don’t often use fruit in savoury food, but the sweet hit of papaya in this dish always lifts my spirits. If you can find a nice ripe fruit, and add a squeeze of lime juice, the sugary sweetness on your tongue is amazing.

I’ve always loved salmon, and eggs, and creamy goats’ cheese… so a recipe that combines all three is a triple winner in my book!

Rich, warm and creamy, risotto is the ultimate comfort food. This is the dish that I turn to whenever I’m feeling low. Whether it’s a nasty cold or a simply the after-effects of an over-indulgent weekend, this dish never fails to sort me out.

you can’t beat a big bowl of chilli when you’re feeling chilly – and this recipe’s a good one.

Despite being a week of indulgence, the grocery list for Index card 6 is relatively modest – especially since you probably have many of the ingredients already.

Check the quantity and condition of any basil, coriander, chilli, garlic cherry tomatoes and spring onions you have left over from last week’s meals. And see if you still have sufficient parmesan, balsamic vinegar, crushed chillies, smoked paprika, fish sauce, red curry paste, sesame oil, soy sauce, wok oil, caster sugar, pasta and rice for another week.

For authenticity, the Chorizo and red bean chilli calls for long grain rice, but if you have basmati left over, I’d use that.
