Butterbean and chorizo stew

About This Recipe


Butterbean and chorizo stew:
100g (about ½ a ring) of chorizo, sliced
1 red onion, finely chopped
2 cloves of garlic, crushed
400g tin of butter beans, rinsed and drained
1 tbsp balsamic vinegar
Chopped parsley to serve

Chargrilled aubergine:
1 aubergine, cut across at an angle into 1½ cm slices
¼ cup of fresh basil leaves, chopped
1 clove of garlic, crushed
2 tbsp olive oil
1 tbsp balsamic vinegar
Pinch of salt

Cheat’s patatas bravas:
3-4 medium potatoes, peeled and cubed
1 clove of garlic, crushed
3 tbsp mayonnaise
1 tbsp chilli sauce
A sprinkling of smoked paprika


  1. Bring a large pan of water to the boil and parboil the potato chunks for 10 minutes. Drain and set aside.
  2. Mix together the oil, basil, garlic and balsamic vinegar and brush it over the slices of aubergine. Season to taste.
  3. Meanwhile, gently fry the chorizo in a little olive oil until the oil starts to seep out. Add the red onion and garlic and cook, stirring occasionally for 5 minutes until they start to soften. Add the beans and balsamic and bubble over a medium flame until heated through. Remove from the pan and keep warm.
  4. Add a little olive oil to the pan and fry the cubes of parboiled potato, along with the garlic, stirring regularly, until they become crispy and brown.
  5. Meanwhile, heat a griddle for the aubergine slices and cook in batches for 3-4 minutes on each side until charred and tender.
  6. Divide the stew, fried potato and aubergine slices between 2 plates and sprinkle chopped parsley over the beans. Mix the mayonnaise and chilli sauce together and spoon over the potatoes and sprinkle with paprika. Serve immediately.
