Quick and tasty vegetable chilli

Ingredients

1 onion, chopped
2 carrots, finely diced
4 cloves of garlic, crushed
2 red chillies, finely chopped
1 tsp chilli powder
½ tsp smoked paprika
1 red pepper, deseeded and diced
1 courgette, diced
400g can of chopped tomatoes
1 cup of vegetable stock
1 large pinch of caster sugar
400g can of kidney beans, drained and rinsed

1 cup long grain rice
2 cups water

1 tsp balsamic vinegar
½ cup basil leaves, chopped
½ cup coriander leaves, chopped
Salt and pepper to taste

Instructions

  1. Fry the onion and carrots for 3-4 minutes until the onion begins to soften, then stir in the garlic and cook for a further minute, before adding the other vegetables, spices, tomatoes, stock, sugar and kidney beans. Adjust the heat so that the contents bubble away nicely, without becoming too vigorous (overheating will make the tomatoes sharp).
  2. Meanwhile, put the rice in a large, lidded pan along with the water and set the heat high until the water starts to boil. When most of the water has evaporated, turn the heat low and cover with a lid to steam.
  3. After about 10-15 minutes, when the carrots in the chilli have become tender, and the sauce is rich and thick, stir in the balsamic vinegar, then remove from the heat. Stir in the basil and coriander.
  4. Serve immediately, with the rice.
