About This Recipe
½ packet dried linguini
1 small onion, finely chopped
½ tsp caster sugar
2 cloves of garlic, crushed
2 tbsp balsamic vinegar
1 punnet cherry tomatoes, halved
350g seafood cocktail (a mixture of prawns, mussels and squid rings)
½ cup basil leaves
Grated parmesan to taste (optional)
- Bring a large pan of salted water to the boil and cook the pasta according to the instructions on the packet. While the water is coming to the boil, prepare the other ingredients and start making the sauce.
- Begin by gently frying the onion, with the sugar, in a little olive oil. When the onion starts to turn translucent, add the garlic, halved cherry tomatoes and balsamic vinegar, and simmer until the pasta has about 5 minutes left to go. Season to taste. Add the seafood mixture and warm through until the linguini is done.
- Toss the pasta and sauce together with the basil leaves and serve, with a bowl of grated parmesan on the side to be added as desired.
