Spanish-style bangers and beans

About This Recipe

Ingredients

1 onion, chopped
1 packet of ready-to-cook chorizo sausages
400g can of butter beans, drained and rinsed
400g can of chopped tomatoes
½ cup beef stock (or red wine)
½ tsp smoked paprika
1 handful of parsley
Fresh ground black pepper
Hunks of bread or toast to serve*

Instructions

  1. Cook the onion and chorizo in a hot frying pan with a little olive oil until the onions soften and the sausages start to brown.
  2. Add the beans, tomatoes, stock and paprika and simmer for 7-8 minutes until the sauce has reduced and thickened. Remove from the heat and spoon into bowls.
  3. Sprinkle with parsley and pepper and serve.

* Skip the bread if you are using this as a gluten-free recipe.
